WEIGHT WATCHERS..Orange Chicken...Delicious!

Orange Flavored Chicken, also mistakenly referred to as General Tso’s chicken, is a Chinese fast food favorite. The problem is, this dish is packed with tons of fat and calories. One average sized portion of orange flavored chicken can set you back 600-800 calories and over 30 grams of fat! Yikes! Those are some scary numbers. Instead, try this amazing Orange Flavored Chicken recipe that has 6 Weight Watchers Points per serving. It’s deelish!







Orange Chicken Recipe

Ingredients:

1 pound uncooked boneless, skinless chicken breast, cut into 2-inch strips

2 cup cooked white rice, kept hot

Rind of a small orange sliced into thin strips

1 1/2 Tbsp cornstarch

3/4 cup canned chicken broth, reduced-sodium

2 Tbsp sugar

1 Tbsp white wine vinegar

2 tsp peanut oil

1/2 tsp ground ginger

2 medium garlic cloves, minced

2 Tbsp low-sodium soy sauce

2 medium scallions, chopped

1/2 tsp red pepper flakes, or 1 dried chili pepper, minced

1 tbsp sesame seeds



**For added nutritional value, substitute the white rice with brown rice



Directions:

In a bowl, whisk together the soy sauce, broth, sugar, cornstarch, ginger, and vinegar, then set aside.

In a large skillet, heat peanut oil on medium-high heat. Add orange rinds, scallions, garlic and red pepper flakes and cook for about 2 minutes. Add in the chicken and cook for approximately 6 minutes, or until chicken is golden brown.

Now mix in the sauce and let simmer until the chicken is cooked all the way through and the sauce starts to get thick, this should take approximately 3-4 minutes. On a plate, serve chicken and sauce over rice and garnish with a sprinkle of sesame seeds



Serving size = 1 cup of chicken and 1/2 cup of rice

ORANGE CHICKEN - Delicious Taste of Home Recipe

4 Servings
Prep: 5 min. Bake: 50 min.Ingredients


4 chicken leg quarters (3-1/2 pounds), skin removed

1 teaspoon salt

1/8 to 1/4 teaspoon pepper

3 tablespoons orange juice concentrate

1 tablespoon honey

1 teaspoon prepared mustard

Directions

Place chicken in a single layer in a greased 13-in. x 9-in. baking pan; sprinkle with salt and pepper. Bake, uncovered, at 375° for 25 minutes.

In a small bowl, combine the orange juice concentrate, honey and mustard. Baste chicken with half the marinade. Bake 15 minutes longer; baste with remaining marinade. Bake 10 minutes more or until the meat juices run clear. Yield: 4 servings.





Nutrition Facts: 1 serving (1 each) equals 310 calories, 9 g fat (2 g saturated fat), 142 mg cholesterol, 733 mg sodium, 10 g carbohydrate, trace fiber, 45 g protein.

CRANBERRY CHUTNEY RECIPE

I came up with this Cranberry Chutney Recipe after watching my favorite icon "Martha Stewart"! I have to share this with you because this dish is so delicious with turkey, chicken, pork and ham!

Here it is.....

CRANBERRY CHUTNEY RECIPE
Ingredients:
3 cups fresh or frozen cranberries
1 cup chopped dried apricots
1/2 cup chopped pecans
1/2 cup chopped onion
1/2 cup cider vinegar
1/2 cup light corn syrup
3/4 cup packed brown sugar
2 tablespoons honey
1-1/2 tablespoon grated orange peel
3/4 cup orange juice
1/2 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/8 teaspoon nutmeg

Directions
In a large heavy saucepan, combine all ingredients. Bring to a boil. Reduce heat and simmer, uncovered, for 15-20 minutes or until thickened and cranberries have popped.
Chill. Serve as an accompaniment to turkey, chicken, pork and even ham!

Serve on sandwiches instead, or with mayo!

Yields: about 3-1/2 cups.

*Yet the shoppers were ready with cash, checks and credit*

*Pushing folks down to the floor just to get it!*

*CDs from Madonna, an X BOX, an I-pod*

*Something was changing, something quite odd! *

*Retailers promoted Ramadan and Kwanzaa*

*In hopes to sell books by Franken & Fonda.*

*As Targets were hanging their trees upside down*

* At Lowe's the word Christmas - was no where to be found.*

*At K-Mart and Staples and Penny's and Sears*

*You won't hear the word Christmas; it won't touch your ears.*

*Inclusive, sensitive, Di-ver-si-ty*

*Are words that were used to intimidate me.*

*Now Daschle, Now Darden, Now Sharpton, Wolf Blitzen*

*On Boxer, on Rather, on Kerry, on Clinton !*

*At the top of the Senate, there arose such a clatter*

*To eliminate Jesus, in all public matter.*

*And we spoke not a word, as they took away our faith*

* Forbidden to speak of salvation and grace*

*The true Gift of Christmas was exchanged and discarded*

*The reason for the season, stopped before it started.*

*So as you celebrate 'Winter Break' under your 'Dream Tree'*

*Sipping your Starbucks, listen to me.*
